Stuffed Baked Apples with Melted Cheddar
Yields 4 servings
– 4 baking apples (i.e. Granny Smith)
– 1 Tbsp packed brown sugar
– 1/4 tsp ground ginger or cinnamon
– 2 Tbsp melted butter or margarine
– 1 cup shredded cheddar cheese
– 2 Tbsp chopped pecans
– 2 Tbsp dried cranberries
Preheat oven to 375 degrees. Core apples and place open side up in a baking dish or in individual baking ramekins.
Combine pecans, brown sugar, cranberries, butter, cheddar and cinnamon/ginger in small bowl; mix well. Spoon over apples.
Bake apples for about 30 min or until tender. Let apples stand 5 minutes. Spoon remaining pan juices over apples and serve warm.
